I like to take food to the next level! While PB&J’s are usually the best choice for the kids, I want a sandwich I look forward to eating all day! In my house, the perfect picnic sandwich has 3 basic requirements!

Has to be made the night before the picnic! I want to make an amazing sandwich that I can wrap in butcher paper, toss in a ziplock bag, and know it’s going to taste great the next day. Getting out the door is so much easier when food is all ready to go.

Should never get soggy! This is easily accomplished by using a higher quality of bread. Put away the normal loaf of white/wheat sandwich bread and dive into the world of French, Ciabatta, Semolina, and other freshly made breads. These breads tend to have a harder crust that helps them stay “soggy-free!”

Has to have ingredients that I crave! Sure a turkey sandwich with American cheese accomplishes the task. But, a steak sandwich with horseradish sauce and sharp cheddar...I’ll be anticipating the moment I get to bite into that one all day.

Chipotle Chicken Bacon Ranch Picnic Sandwich Recipe
Ingredients
- 2, 12-inch loaves semolina or french bread (unsliced)
- ½ cup chipotle sauce
- ¼ cup ranch
- ¼ cup mayo
- 2 lbs shredded rotisserie chicken
- 2 lbs bacon
- 1 lb cheddar cheese (sliced)
- 1 small red onion (diced)
- 3 cups spinach
Make It
- Create the sandwich on the full loaf of bread. Slice in 3 inch portions and wrap in butcher paper when complete.
- Mix together chipotle sauce, ranch, and mayo and spread on bread.
- Cook bacon, pour off grease and chop.
- Add on remaining ingredients and refrigerate overnight.
Horsey Steak and Cheddar Picnic Sandwich Recipe
Ingredients
- 2, 12-inch loaves of ciabatta bread
- 1 lb sharp cheddar cheese (sliced)
- 2 lbs thinly sliced steak (or roast beef)
- ½ cup sour cream
- 2 Tbsp horseradish
- 2 Tbsp mayo
- 1 tsp apple cider vinegar
- ⅛ tsp black pepper
- 1 red onion
- ⅛ cup butter
- 1 tsp salt
- ¼ cup pickled jalapeno peppers
Make It
- Create the sandwich on the full loaf of bread. Slice in 3-inch portions and wrap in butcher paper when complete.
- Mix together sour cream, horseradish, mayo, vinegar, and black pepper to use as a sauce for the sandwich.
- Brown steak or roast beef in a skillet, add salt.
- Saute red onion in a skillet adding 1 pad of butter to help caramelize.
- Assemble the sandwich with the remaining ingredients and refrigerate overnight.
The Grazie Italian Picnic Sandwich Recipe
Ingredients
- 2, 12-inch loaves ciabatta or other Italian bread (unsliced)
- 2 red peppers (diced)
- 1 lb genoa hard salami
- 1 lb prosciutto
- 1 lb ham
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 Tbsp oregano
- 1 tsp black pepper
- 4 cups spinach
- 2 Roma tomatoes (sliced)
- ¼ cup banana peppers
- 1 lb provolone cheese (sliced)
- ½ cup red onion
Make It
- Create the sandwich on the full loaf of bread. Slice in 3-inch portions and wrap in butcher paper when complete.
- Mix together olive oil, vinegar, oregano, and black pepper for sauce. Double recipe if needed.
- Assemble sandwich with remaining ingredients and refrigerate overnight.
